My friend Takehiro is a ramen master, he works in a ramen shop AND for a ramen magazine. Needless to say he knows wayyyy more about ramen shops in Tokyo than I do. Check out these delicious bowls he served up for me at his apartment the other night. Almost everything he made himself from scratch, including the broth, smoked pork, marinated hard-boiled eggs, and bamboo shoots. Usually he makes the noodles as well but this time he had some special ones flown in from Kyoto. He wants to open a noodle shop in the states someday, if so I will be first in line. Delicious.
